Eunice Layed an Egg

Everyone knows about the goose that layed the golden egg, but what about the chicken that layed the Christmas egg? Well Eunice  had a nice present for me waiting out in her nest in the coop this morning! Seems the hot oatmeal she had for breakfast on Christmas day inspired her to take a notion to lay her weekly egg …. or it could have been because its full moon week, who knows.

EuniceNobody ever eats Eunice’s eggs - she’s just too dad-blamed old and has seen too much in the world to have old folks like us taking her pride and joy(s) and scrambling them into breakfast. How insulting! Nope… only the most ingenious things happen to Eunice’s eggs, like the time I saved a bunch, blew them out and made a lovely wind-chime with her speckled, hollowed out eggs - all nice and twirly and glistening in the sunshine on the front porch. No, they didn’t make any magical sounds but it sure did look pretty.

Eunice is a wonderful pet, and a prize winning Chauntecler hen who’s relatives come all the way from Paris, France. Her great, great, great, great, great, great Grand-Cock won a ribbon at a big fowl show at Madison Square Gardens in the 1940’s. He was as handsome as Fred Lorenzen I tell ya! Wattles and all!

So now Eunice’s egg is simply sitting on the window sill of the kitchen until I can figure out what ingenious thing to do with it. And Eunice is in her nest enjoying some fresh chicken scratch and thankful that someone is babysitting her “kid” while she gets her beauty rest!

Christmas Day 2007

Beulah's Tractor My newest tractor “Big Bertha” was put up for the winter many weeks ago, so I had to rely on its little cousin, a 1953 Ford Jubilee tractor… oh yes, plus a Honda Foreman…. they both like to take turns playing in the snow and today they were just prime for some exercise!The turkey turned out good, so did the stuffin!

Here’s the recipe for my famous Cornbread stuffin’:

Beulah’s Cornbread Stuffin’

  • 1 (16 ounce) package dry corn bread mix
  • 2 tablespoons butter
  • 1/2 cup chopped celery
  • 1 small onion
  • 2 eggs, beaten
  • 2 cups chicken stock
  • 2 tablespoons dried sage
  • salt and pepper to taste

DIRECTIONS

  • Prepare the dry corn bread mix according to package directions. Cool and crumble.
  • Preheat oven to 350 degrees F. Grease one 9×13 inch baking dish.
  • In a large skillet over medium heat, melt the butter and saute the celery and onion until soft.
  • In a large bowl, combine the celery, onions, 3 cups crumbled corn bread, eggs, chicken stock, sage and salt and pepper to taste; mix well.
  • Place into prepared dish and bake at 350 degrees F for 30 minutes.

Everything turned out real fine and we really enjoyed ourselves. It was nice of Gravel Gertie to have called in last night after being abducted by aliens; it’s always nice of folks to share their adventures with us here in the cabin. So here’s to all of our wonderful listeners out there in the big world - we want to wish each and every one of you a real fine Christmas and we hope nobody got one of them turkey deep fryers and set their cabins ablaze!

Welcome to the Cabin

This here’s Beulah and I want to welcome you all to the cabin here at Speedway City!. We’re gonna have a good show tonight, Harold and LeRoy and I, and I’ve got some real nice letters from you folks that I’ll be reading out loud for you all. Its nice that you folks take the time to write us - we know how them Race Talk Radio folks is…. they get all the good stEUNICEuff and we just stay put in the cabin bringin down the cobwebs.

Been a good year here at Speedway City although sometimes I wonder if them other radio folks is laughin at us or with us but it don’t really matter so much. Just so long as well all have a good time and nobody gets hurt. Except for the odd sqwerl that gets made into sqwerl-kabobs but that there is another story!

Well I best go and start making the stuffin for tonights turkey. I’m sure Harold is likely pouring down some Cabin Fever in his rutabaga hole so I’m going to go give him a kick now.

 Don’t forget that there’s a new bunch of stuff for you Speedway fans over at the iHick.com store. That nice lady at the radio station drew a real nice picture of my favorite hen Eunice and she’s now on shirts and hats and stuff. Things you’d wear to the lodge or church on Sundays!
